Balti Chicken
3 tbsp oil
4 green cardamom pods
2 tsp cumin seeds
2 onions sliced
2 garlic cloves crushed
1kg chicken breast chopped
1 tsp chilli powder
½ tsp salt
1 tsp garam masala
100ml water
10 tomatoes roughly chopped. If you don't like the skin you can remove it.
2 tbsp coriander for cooking and garnish

Method
Heat the oil over a medium heat and add the cardamom and cumin seeds Once you have fried these for a minute or until they start to pop add the onions and garlic Fry all of this for 10-15 minutes over medium heat until nicely browned Add the chicken and stir fry for 5-6 minutes until sealed Add the chilli, salt, garam masala, water and tomatoes Bring to the boil and then turn the heat down to a simmer After about 20-25 minutes the meat should be cooked and the sauce thickening Add the coriander and stir for a couple of minutes Serve and garnish
