Dopiaza Chicken

1kg of chicken breasts cut into 1 inch cubes

2 medium sized onions sliced

2 medium sized onions finely chopped

1 green pepper sliced

3 fresh green chilies (seeded)

3 teaspoons of chopped garlic

1 teaspoon of chopped ginger

1 teaspoon cumin powder  

1 teaspoon coriander powder

1 ½ teaspoons turmeric powder

1 teaspoon of cardamom powder

1 teaspoon cinnamon (ground)

¼ teaspoon ground cloves

4 tablespoons of oil

2 tomatoes (peeled and chopped)

100ml cup of water


Fry the the finely chopped onions, chillies and spices together to make a puree.  

Fry the sliced onions and pepper in some oil until browned and remove with a slotted spoon.  

Add the puree to the oil and stir fry for about 5 minutes then add the tomatoes and cook until the tomatoes have broken down.

Add the chicken and water and bring it to the boil then cover and simmer for around 30 minutes.

Add the fried, sliced onions and pepper and cover then simmer for a further 5-10 minutes.
