Fajitas Chicken

400g skinless chicken breasts cut into 1 inch strips

1 green pepper cut into ¼ inch strips or rings
1 yellow/orange pepper cut into ¼ inch strips or rings
1 red pepper cut into ¼ inch strips or rings

½-¾ tsp chilli powder
¾-1 tsp coriander powder
¾-1 tsp cumin powder
¾-1 tsp oregano

2 tbsp of olive or cooking oil
1 small bottle of beer
1 packet tortillas
guacamole
sour cream
salsa
grated cheddar cheese

Ingredients
Method

Heat oil in a deep wok/frying pan on a high heat
Add the chicken and stir fry until cooked through but not browned for approx. 5 mins
Add the onions and peppers then stir fry for about another 5 mins
Cover and let steam for approx. 5 mins
Add in spices and stir thourghly until the meat and vegetables are coated
Add approx. 250ml of beer and stir through then let it reduce for about 5 mins
Serve in a large bowl and roll your own with tortilla, guacamole, sour cream, salsa, cheese etc
