Malay Chicken and Rice
Ingredients
2 chicken breasts cut into strips
Pinch of salt and pepper
1 tbsp honey
2 large finely diced onions
1 red pepper ½ cm dice
200g button mushrooms sliced
½ tsp mild chilli powder
1 tbsp curry power
150g frozen peas
4 tbsp soy sauce
3 cloves of crushed garlic
Rice for 2 people
2 eggs
Cook the chicken then the onions and peppers

Method
Season the chicken and fry on a high heat but do not overcook.
Pour the honey on the chicken and allow to caramelise it.
Ensure the chicken strips are cooked then put aside on a plate to cool.
Now fry the chopped onions, red pepper and garlic in the same pan.
After 5 minutes add the chopped mushrooms.
Cook the rice and peas then mix them and allow to cool.
Add the rice, peas, curry powder and soy sauce and fry on a high heat.
Stir in your chicken.
In another pan fry the 2 eggs - make sure they have runny yolks.
Serve the rice mix and place the egg on top.
