Mushroom Pakora


10-12 button mushrooms  

2 tsp tandoori paste  

2 tsp ginger and garlic paste  

½ tsp green chilli paste  

½ tsp turmeric powder  

1 tsp lemon juice  pinch of salt


½ tsp Cumin powder  

½ tsp Chilli powder  

½ tsp salt  

½ tsp garam masala  

100 grams gram flour  

160-220 ml water  

2 large pinches fresh coriander


Mix in a bowl the marinade ingredients and coat the mushrooms evenly.

Leave to stand for 10 or more minutes.  

In a separate bowl add all the dry ingredients and gradually add the water to form a batter.  

Really mix it through with your hand. Let the mix stand for 5 minutes and then add the marinaded mushrooms to the batter and ensure they are fully coated.  


Fry a few at a time placing them gently into the heated oil at 170C. 

Fry for about 3-4 minutes until they are golden brown.  

Remove with a slotted spoon and put them on a kitchen paper.  

The first layer of the platter may be covered with kitchen paper to remove the excess oil
