2 chicken breasts

Echalion shallot diced

1 garlic clove diced

½ bunch Thai Basil

1 red chilli diced

1 pack green beans topped and tailed then halved

1 ½ tbsp. sweet soy sauce

½ tbsp. fish sauce

Rice for 2 people

2 eggs

Method

Peel and very, very finely dice the shallot chilli and garlic.

I tend to blend them.

Heat 2 tbsp of oil in a wok on a high heat.

Once hot add the green beans to the pan and stir fry for a couple of mins.

Remove with a slotted spoon and put aside.

Turn the heat down to medium-high and add 1 tbsp. of oil to the pan.

Add the shallot, garlic and chilli with a little pinch of salt and cook for 1-2 minutes.

Turn the heat back to high, add the chicken to the pan.

Once cooked through add the green beans, sweet soy sauce and the fish sauce.

If the mixture is a little dry add some water.

In another pan fry the 2 eggs - make sure they have runny yolks.

Add the basil to the main wok and stir it in.

Put out the rice, put the chicken stir fry on it and then add the egg.
