Satay Chicken with peanut sauce

Marinade

1kg chicken meat cut into ½" by 1" pieces

For the marinade

2 tbsp groundnut or vegetable oil

2 tbsp light soy sauce

1 tbsp lime juice

2 tsp tamrind paste

1 tsp ground cumin 

1 tsp ground coriander

1 tsp light brown sugar

1 lemon grass stalk peeled and chopped

2 cloves crushed garlic  

 

Peanut sauce

2 tbsp smooth peanut butter

1 tbsp fish sauce

1 tbsp light brown sugar

2 tsp red thai curry paste

250 ml coconut cream

Ingredients
Method

Heat the sauce ingredients in a pan stirring to make sure it is well mixed

Bring to boil and let simmer for about 5 minutes - stir as needed  

Grill the chicken for 3-5 minutes each side - until cooked

Eat
