Spiced Salmon Bake

For the bake
2 red onions cut into 2cm pieces

1 green pepper cut into 2cm pieces

1 red pepper cut into 2cm pieces

1 yellow pepper cut into 2cm pieces

6-8 asparagus spears

200g of black beans washed and drained

1 tsp  of chopped garlic

2 tbsp olive oil

250ml vegetable stock


For the salmon
2 fillets of salmon with the skin removed

1/2 tsp chilli powder - to taste

1 tsp cumin powder

1/2 tsp garlic powder

1/2 tsp onion powder

1 tsp paprika

2-3 grinds of fresh pepper

20-30 ml lime juice

Method

Heat the oven to approx. 200 C

In a roasting tray mix all the vegetables except for the asparagus.
Place roasting tray in the oven.

Mix the salmon ingredients and spoon over the salmon and rub it in.

After 20 minutes remove the baking tray and add the vegetable stock and stir the vegetables.

Lay the asparagus over the vegetables and place the salmon over it.

Return the baking tray to the oven and bake for a further 20 minutes or until the salmon is cooked.
