Thai Green Curry Paste

1-2 lemongrass stalks, topped and tailed with core chopped  

10-15g peeled galangal, chopped  

6 medium-hot green chillies, chopped  

3-4 kaffir lime leaves, roughly chopped  

1 tbsp coriander seeds, ground  

1 tbsp cumin seeds, ground  

3-4 large garlic cloves, roughly chopped  

5-6 shallots, roughly chopped

Method
Ingredients

Put all the ingredients into a mini food processor with 3 tablespoons water and 1 tablespoon of oil  

Grind into a smooth paste.

Store in air tight (clean container) or freeze.
