Tom Yum Soup

 500 ml of chicken stock

1 finely chopped stalk of lemon grass  

4 kaffir lime leaves  

2 small red chillies - you decide how much heat  

4 cloves garlic finely sliced or crushed  

8-10 small mushrooms quartered - button, oyster etc.  

1 green pepper cut into 1cm cubes  

2-3 tomatoes roughly chopped or 6-8 cherry tomatoes  

2-3 table spoons of finely chopped coriander stalks or leaves 

3-4 tsp fish sauce  

10 large prawns or pre-cooked chicken slices  

Some more coriander to garnish

Ingredients
Method

 Put lemongrass and stock in a pot and bring to boil - let simmer for 5 minutes.  Add garlic, chilli, lime leaves and mushrooms and simmer for another 5 minutes.  

Add chopped coriander, meat, pepper and tomatoes and simmer until prawns are or meat is cooked.  

Add fish sauce and taste.  

If necessary add more sauce or chilli and bring to boil for a couple of minutes.  Serve with the coriander garnish
