Vegetable Pakora
½ Onion finely chopped
½ Potato really finely chopped or par boiled and mashed
60 grams spinach chopped
½ tsp whole coriander seeds crushed - not ground
1 tsp cumin seeds
1 tsp salt
1 tsp Red chilli powder
1½ tsp lemon juice
1 tsp dry fenugreek(Methi)
1 level tbsp. ginger and garlic paste
125 grams gram flour
4 tbsp water - plus more if needed
170 C Oil for deep frying

Method
Mix in a bowl onion, potato, crushed coriander, cumin, salt, red chilli powder, fenugreek, and ginger garlic paste and lemon juice. Leave to stand for 10 minutes.
Add the chopped spinach and mix then add the gram flour and gradually add the water to form a batter. Really mix it through with your hand. Take a spoonful of the mixture and drop it into the oil.
Fry a few at a time placing them gently into the heated oil.
Fry for about 5 minutes and remove with a slotted spoon and put them on a kitchen paper.
The first layer of the platter may be covered with kitchen paper.
